Philosophy on Healthy Eating

Diet, Low Carb, Fat Free?, Skim !

The chances are foods claiming these labels are going to be a highly processed, modified version of what you think you are getting.  A clear line must be drawn between Low Fat, Diets and Healthy Eating. I believe in unrefined, unprocessed natural foods.  Organic foods are fuller in flavour, nutritional value and free from harmful chemicals.  In reality, your body can handle a couple of extra carbs in the pursuit of flavour and health.

Healthy eating is no longer just a trend; I have seen a major shift in the past few years in people's attitude towards food.  For example ideas such as 'Raw Foodism' are becoming popular as people search for more unrefined and unprocessed foods beyond organic.  As a chef, I too have my own opinions.

Think back to when milk was neither pasteurized (heated to kill bacteria) nor homogenized (stopping the fat and liquid molecules separating), and there was no such thing as skim, no fat, high fibre and so on. Milk, in its natural form has highly beneficial proteins and enzymes. When you begin to modify the natural state of food of course it will affect the final product, which frankly in this case is substandard in terms of flavour and health benefits.

What an exiting thought for food safety laws to be relaxed and allowed unpasteurized cheeses to be produced and imported and forÿpeople to drink unpasteurized milk with there tea or coffee, somethingÿonly a lucky few have. Mass production and food safety concerns have created controversy when it comes to healthy eating.

Here at The London Club I do go to the butcher to select the finest meat, pick out the vegetables from fresh produce markets and take an interest in sourcing the freshest and best produce.  This is especially important to me as I want you to enjoy what I create, not what I buy from someone else and put on a plate.

My easy to follow diet:
* All foods in moderation
* Avoidÿprocessed foods
* Go organic
* Exercise
* Eat dessert
* Exercise
* Hand cut chips
* Exercise
* Full cream milk
* Exercise


It's that Simple!
